Salmon with Herb Butter and Bacon

Nigel Slater did it again! After sharing a mouth-watering cooked oyster recipe, he now delivers a recipe for an easy mid-week dinner, associating tender salmon and crispy bacon.

We love the idea of associating fish and meat. It is something we see more and more and can only agree with! The flavours and textures complement well each other, and add a little Je-ne-sais-quoi to your casual mid-week dinner. Why wait for the weekend?

Ingredients
  • 2 salmon fillets (200g each approximately)
  • 2 rashers of smoked bacon
  • 125g of butter
  • 2 tsp of chopped chives
  • 2 tsp of chopped lemon thyme
Instructions
  1. Slightly season the salmon fillets with salt. Set the oven at 200C/gas mark 6.
  2. In a mixing bowl or using a food processor, combine the chopped chives and lemon thyme with the butter. Season with black pepper.
  3. Take the bacon and place them close together, flat on the work surface. Place one of the pieces of salmon fillet on top of the bacon. Spread 1 heaped tbsp of the herb butter over the salmon then wrap the bacon rashers loosely around the fish, tucking them tightly underneath as you place the fish in a foil-lined baking dish.
  4. Repeat with the second piece of salmon, the herb butter and two more rashers of bacon. Spread any remaining butter on top of the bacon before you put it in the oven.
  5. Place the fish in the preheated oven and roast for 20 minutes until the fish is firm but only just cooked.

Nigel Slater’s recommended twists:

You can use pancetta instead of Bacon. Swap the chives and thyme for tarragon and parsley. Chervil would also go well with salmon.
